Fished directly from the Bay of Biscay in Cantabria, Spain, these anchovies are some of the finest in the world. They're salted the same day they come out of the water and then packed away to age for 12-18 months. A year later, they're carefully filleted, skinned, and trimmed by hand, placed in the tin, and covered with extra virgin olive oil from Castillo de Canena.
