The plum-shaped San Marzano comes into season in high summer. It is one of the most prized varieties of tomato, for its dense flesh and concentrated flavour.
We wood-roast them slowly with just olive oil, salt and a single leaf of basil in the centre to concentrate the sweetness further.
Perfect alongside meat, fish, or simply as part of a vegetable antipasti.

SERVE AT ROOM TEMPERATURE. ALTERNATELY, HEAT OVEN TO 160ºC. PLACE TOMATOES ON TRAY AND WARM IN OVEN FOR 8 MINUTES
