Vin Santo del Chianti Classico, Fèlsina 2008
This most historic of Tuscan wines was once made by every farmer, and was their pride and joy. Today, the drying of the grapes (for about 5 months after harvest) followed by ageing in small barrels for up to 7 years makes it an expensive process, but it retains its central place in Tuscan life. One sip of its nutty and gloriously rich fruit will show you why Tuscan farmers used to welcome guests to their home with a ‘vin santino’, a small glass of Vin Santo. Drink with chocolate, Cantucci biscuits, on its own or, as in Tuscany, with friends.
