Agretti with Slow-cooked Tomato and Pangrattato

The arrival of Agretti is a highlight for the River Cafe chefs. This Mediterranean grassy vegetable, also known as Barba di Frate (Monk's Beard), has a healthy, mineral, earthy flavour - perfect with the sweetness of the slow-cooked tomato sauce and the crunchiness of the pangrattato.

  • Serves 2; approx. 200g agretti

AT HOME PREPARATION:
BRING A POT OF SALTED WATER TO THE BOIL AND WARM THE TOMATO SAUCE OVER A MEDIUM HEAT IN A SEPARATE SAUCEPAN.
COOK THE AGRETTI IN THE BOILING WATER FOR 4 MINUTES AND THEN DRAIN. SEASON WITH A PINCH OF BLACK PEPPER, DRIZZLE WITH OLIVE OIL AND TOSS WELL.
SPOON THE TOMATO SAUCE OVER THE AGRETTI AND SPRINKLE THE PANGRATTATO ON TOP.
