Butterflied Leg of Lamb

We have boned and ‘butterflied’ the leg of young lamb, and marinated it in lemon, garlic and rosemary.
Half leg serves 2-3 people; approx. 700g
Whole leg serves 4-6 people; approx. 1.3kg
AT HOME PREPARATION:
PREHEAT A GRILL TO VERY HIGH.
REMOVE THE MEAT FROM THE MARINADE AND PAT DRY. SEASON WITH SALT.
CAREFULLY PLACE THE MEAT ON THE GRILL AND BROWN ON BOTH SIDES.
LOWER THE HEAT AND CONTINUE TO GRILL, TURNING ONCE. ALLOW EIGHT MINUTES PER SIDE, MORE FOR WELL-DONE.
