Mozzarella di Bufala
The milk which is used for mozzarella comes from carefully selected buffalo and must be delivered to the producer within 13 hours of milking.
The taste of buffalo milk mozzarella is quite unlike any other mozzarella, it has a mossy aroma with a savoury flavour and sweet hints.
Best eaten firm and fresh with just some seasoning and extra virgin olive oil. Also goes perfectly with vegetables such as fresh tomatoes and basil in the summer, or radicchio and roasted pumpkin in the winter.
