Pannacottas with Grappa Nardini
Double cream slowly cooked with lemon zest and vanilla, gently set with gelatine. The addition of grappa gives a contrast to the delicate pannacotta.

AT HOME PREPARATION:
TO UN-MOULD THE PANNACOTTA, POUR WATER FROM A JUST-BOILED KETTLE INTO A SHALLOW BOWL. DIP THE PANNACOTTA INTO THE HOT WATER AND KEEP IT THERE FOR 10 SECONDS. INVERT ONTO A PLATE. SERVE WITH AN OPTIONAL EXTRA SPLASH OF GRAPPA.
