Peas are quickly blanched with mint and garlic, then submerged under extra virgin olive oil - so called sott'olio, or 'under oil'.
This cooking method preserves the peas' fresh texture. Perfect to scatter through a salad of rocket with balsamic, or alongside mozzarella with basil and mint.
