Porcini Risotto Kit

Available for delivery throughout mainland UK

A classic risotto full of flavour that can be enjoyed year-round using store cupboard ingredients. We like to finish this dish off with the leaves from the celery heart.

Each kit makes enough to serve 2 and contains:

  • Carnaroli rice 250g
  • Chicken stock 500ml (celery)
  • Parmesan 125g (milk)
  • Butter 125g  (milk)
  • Soffrito 125g  (milk, celery)
  • Dried Porcini 100g
At home preparation:
Soak the porcini with a cup of boiling water. Add the chicken stock to saucepan and bring to a simmer. In another sauce pan warm the soffrito on a medium heat, add reconstituted porcini, reserving the liquid, and rice and stir for 4-5 minutes until the rice is throughly coated with the soffrito. Slowly add the porcini water and then one ladle of stock at a time, constantly stirring. Wait until stock is absorbed before adding next ladle. Continue to add the stock until the rice is just cooked. Take pan off heat, stir through butter and half the parmesan. Serve in two warm bowls with the remaining parmesan sprinkled over.
