Spatchcocked Free Range Chicken

We have marinated these chickens with lemon zest, oregano, thyme and black pepper. For grilling or roasting.

  • Serves 2-4; approx. 900g

AT HOME PREPARATION:
PREHEAT THE OVEN TO 200˚C.
SEASON THE CHICKEN WITH SALT.
DRIZZLE AN OVEN TRAY WITH OLIVE OIL. LAY THE CHICKEN SKIN-SIDE UP. SQUEEZE OVER THE JUICE OF ½ A LEMON, AND DRIZZLE WITH MORE OLIVE OIL. 
ROAST FOR 25-35 MINUTES, BASTING OCCASIONALLY WITH THE JUICES FROM THE PAN AND SOME MORE LEMON JUICE.
CARVE BY CUTTING ACROSS THE CHICKEN IN THICK SLICES.
