Our famous antipasto that has been on the River Cafe’s menu for over 30 years.
We have prepared and scored the squid for you so it is ready to grill. We have also added wild rocket and our chopped fresh red chilli sauce made with extra virgin olive oil.
AT HOME PREPARATION:
HEAT A GRILL OR GRILL PAN UNTIL VERY HOT. YOU CAN USE A STANDARD FRYING PAN AS WELL WITH A LITTLE OLIVE OIL.
SEASON THE SQUID ON BOTH SIDES WITH SALT AND BLACK PEPPER.
PLACE THE SQUID (INCLUDING TENTACLES), SCORED SIDE DOWN, ON THE GRILL FOR 1-2 MINUTES. TURN THE SQUID PIECES OVER; THEY WILL QUICKLY CURL UP, BY WHICH TIME THEY WILL BE COOKED.
TOSS THE ROCKET IN A DRESSING OF LEMON JUICE, OLIVE OIL, SALT AND PEPPER.
PLACE THE SQUID ON A PLATE, SPOON OVER THE RED CHILLI SAUCE AND SERVE WITH THE DRESSED ROCKET.
