Tacchino Arrosto - Thanksgiving Turkey

A whole Kelly Bronze Turkey, brined at the River Cafe to keep the flesh juicy when cooked, stuffed with herbs from our garden, and ready to roast at home for Thanksgiving.

Sent with our Head Chef's Isole e Olena Chardonnay gravy.

Our turkeys are available for delivery on Wednesday 25th, Thursday 26th, Friday 27th and Saturday 28th November, and will arrive between 3-7pm. Please ensure you place your order at least two days before your chosen delivery date, to ensure availability. If you would like us to roast your turkey for you, please call us on 020 7386 4280 to arrange, and to avoid any possible delivery delays we ask that you collect it from The River Cafe approximately an hour before your meal.

 

At home preparation: (instructions for 4kg bird) Pre-heat oven to 220°C. Put turkey in heavy roasting tray, roast for 30 mins until golden brown. Reduce oven to 160°C and continue to cook for 2 hrs. 
Pierce thickest part of leg and see if juices run clear. If at all pink or cloudy, return to oven for 30 mins and repeat test. When juices run clear, remove turkey from oven and allow to rest in a warm place, covered with foil, for 40 mins-1hr before carving.
Warm gravy gently in a sauce pan. Enrich with a knob of butter and stir to combine before serving.
