Vitello Tonnato is a classic dish of Piedmont and Lombardy, composed of sliced roast Veal rump, light tuna mayonnaise, and topped with anchovies, capers and herbs. It is an excellent summer party dish, served as an antipasto or a main course, accompanied by a simple tomato salad or wilted and dressed greens at room temperature.
