A bunch of French white asparagus. Cleaned, trimmed and tied for you to blanche at home. The delicate flavour of white asparagus is perfectly complemented by the bottarga, which comes blended into butter to melt on top. We also like to add some extra shavings of bottarga too. Possibly one of the best dishes of the season.

• Serves 2; asparagus approx. 250g, bottarga butter approx. 125 ml
• Allergens: fish, milk
  

At home preparation:

Blanche in boiling salted water for 5 minutes. Remove to a bowl, cut the string and dress with olive oil. Serve with bottarga butter, anchovy butter or simply shaved parmesan.
