Zuppa di Zucca con Mascarpone
A thick, sweet and smooth soup made with Delica and Violino pumpkins.
We usually serve this soup with the new season's green and peppery olive oil, or a spoon of sour crème fraîche, but to enrich it for Thanksgiving we are sending you a jar of Mascarpone cheese to dollop in. Feel free to sprinkle with extra grated parmesan or drizzle with olive oil.
