It’s hard to imagine tomato sauce without basil, roast chicken without rosemary, or borlotti beans without sage.
Italian cooking is impossible without herbs. 
While we would like to cook with fresh herbs all the time, it’s not always feasible, and dried herbs are a great alternative.
They do have a concentrated flavour that can tend toward bitterness, so use less than you would fresh.
