In The River Cafe, we prepare lamb for the grill as the Italians do—first marinating the boned and butterflied pieces in extra virgin olive oil, lemon and garlic. Lamb chops are trimmed and pounded thin for the classic 'Scottadito'.
Our lamb is sourced from the Rhug Estate in Wales, a centuries-old sustainable farm known for its organic meat.
Right now we are serving lamb with fresh coco bianco beans cooked with sage and River Cafe Cappezzana olive oil.
