One of our favourite oils, it is impossible to imagine the River Cafe without I Canonici.
The estate is in Tavarnelle on the western border of Chianti Classico. Owned by the Manetti family, the groves are tended as beautifully as their Fontodi wine estate. This cold-pressed extra virgin olive oil is made with 70% Moraiolo and 30% Corragiolo olives.
The oil is deep green in colour, with a fresh aroma of olives, artichokes and aromatic herbs. On the palate it has a good balance of bitter and spicy, while maintaining a great freshness.
Serve with: green leafy vegetables like spinach and swiss chard, tomatoes and shellfish pasta
